KIBOU puts one of its cult dishes back on the menu for its 10th anniversary
To mark its 10-year milestone anniversary, in June 2023 KIBOU invited fans of the restaurant to let them know what they’d like to see on a special menu that is running throughout August, its official birthday month — and the winning dishes have been announced!
Celebrating 10 years of delicious food at KIBOU, the Cheltenham restaurant is inviting guests, old and new, to enjoy its ‘Best of 10’ specials menu, featuring some of the Japanese eateries' most loved dishes from over the last decade, as voted for by foodie fans across the county — and the winning dishes have been revealed...
As a thank you for all the support customers have shown over the years, the offerings will include a mix of old classics that are no longer on the currentmenu, along with a number of specials that the much-loved restaurant has served over theyears.
KIBOU received over 100 responses from guests, with a numberof clear winners that are now destined to take centre stage on the menu, namelythe Ebi Stak — KIBOU’s signature version of prawn toast — which received over25 per cent of the votes.
Due to escalating food prices, the restaurant had to make thetough decision to remove this dish from the menu earlier in the year, butguests will be delighted to see it return for the month of August.

Diners will also find dishes such as soft-shell crab tempura, served on its own or in one ofKIBOU's steamed bao buns, along with finely sliced raw cabbage and crab sauce and beni shoga; the sought-after anko roll which is an avocado topped uramaki roll, filled with monkfish and gomawakame, served with a coriander dressing; chicken or vegetable yaki soba; purin, apopular Japanese custard dessert topped with a thin layer of soft caramel; and more.
Commenting on the ‘Best of 10’ menu, Ian Pechon, senior head sushi chef at KIBOU Cheltenham and one of the original kitchen team members atthe restaurant said: 'This was such a fun menu to pull together, and felt like alittle trip down memory lane, especially with all the great input we had fromour guests.
'We knew the Ebi Stak would be a firm favourite, but what I reallyenjoyed the most was seeing how many of our other dishes guests hadremembered over the years. These include our soft-shell crab tempura, yakisoba, and our delicious anko roll (monkfish uramaki).
'The menu is going to beavailable throughout August and we look forward to welcoming guests, old andnew, to enjoy it.'
